SHRIMP CULICHI with SAUCY SALSA VERDE


INGREDIENTS

  • ½ lb         Shrimp (16-20)
  • ½ jar        Saucy Salsa Verde
  • 1 each     Avocado
  • ½ bu.       Cilantro, rough chopped
  • ½ cup      Coconut yogurt
  • 4 each     Green onions, cut into small pieces
  • 2 each      Radish, shaved thin
  • ½ each     Red onion sliced thin

DIRECTIONS

  • Combine salsa, avocado, cilantro, yogurt, and green onion and blend until smooth consistency. Season with salt and pepper.
  • Heat a sauté pan with olive oil and sear shrimp on both sides for 2 minutes each, season with salt and pepper.
  • Spoon sauce in the bottom of the plate, layer the shrimp and garnish with shaved radish, red onion, and cilantro sprigs.
