Queso Fundido Con Chorizo


INGREDIENTS

  • 1 lb.      Mexican chorizo
  • 2 each  Red bell peppers, medium diced
  • 3 each  Cloves Garlic, chopped
  • 8oz.      Cream cheese, room temp.
  • 8oz.      Shredded Cheddar; Monterey jack cheese
  • 2oz.      Mexican crema or sour cream
  • 3 each  Green onions, sliced

DIRECTIONS

  1. Sauté chorizo until browned, remove from pan and drain excess grease.
  2. Sauté peppers and garlic in the same pan, season with salt and pepper.
  3. Combine chorizo and pepper mixture, allow to cool. Fold into cream cheese, shredded cheese and crema, and mix well.
  4. Pour mixture into an oven safe baking dish and broil for 8-10 minutes until bubbly and golden brown.
  5. Garnish with shaved green onion and serve with warm tortillas
